Wil je er een lekker soepje van maken? Deze is lekker.

Zoete aardappel-limoensoep voor 4 personen.

 Ingrediënten:

1 ui                                                                                                                                                                                                            stukje gember                                                                                                                                                                                                1 peper                                                                                                                                                                                                            3 teentjes knoflook                                                                                                                                                                                   500 gram zoete aardappel                                                                                                                                                                       sap van 2 limoenen                                                                                                                                                                                        1 liter bouillon                                                                                                                                                                                               blikje kokosmelk                                                                                                                                                                                       olie                                                                                                                                                                                                                   2 theelepels kerrie                                                                                                                                                                                     zout en peper.

 

Pel en snipper de uien de knoflook. Schil de gember en snijd in kleine stukjes.  Snijd de peper overlangs door en haal de pitjes eruit. Schil de zoete aardappels en snijd ze in stukken.

Fruit de ui, de peper, de gember en de knoflook in (olijf)olie. Voeg dan de aardappelen en de kerrie toe. Giet 1 liter water in de pan en voeg de bouillonblokjes toe, breng alles aan de kook en laat ongeveer 15 minuten zacht koken.

Pureer de soep.  Voeg dan de kokosmelk en het sap van de limoenen toe en laat warm worden.   Breng op smaak met zout en (liefst versgemalen) zwarte peper.
